Description
Lambic beers have been brewed according to ancient traditions in brewery Oud Beersel since the year 1882. Today, more than 125 years after its establishment, the brewery still strives to maintain this cultural patrimony and is proud to help revive old traditions.
Traditional products reflect the rich history and culture of the area and the brewery. They allow you to enjoy life even more thanks to the robust and complex flavours on offer. These beers bring the past to life and are appreciated throughout the world. The brewery's old Geuze named "Oud Beersel" was recently voted the World's Best Lambic/Geuze beer.
Friends and beer aficionados have reunited to set up the non-profit organisation "De Geuzen van Oud Beersel". They are responsible for organising the brewery visits in Oud Beersel and, over a pint of beer, are preparing to extend their services to include a living brewery museum.
Thanks to the sale of "Bersalis", a blond triple beer with lots of character, Oud Beersel is getting things going again. New labels adorn the bottles of beer and do even more justice to their quality. Discover the marvellous world of spontaneous fermentation!
Beers
Bersalis:
A blond triple beer, full of character! "Bersalis" is a blond triple beer with a distinct character. The full flavour of wheat malt develops while you're drinking, starting off as a fruity bitter note it turns into a rounded sweet aftertaste. The spices that are used leave a pleasant taste in the mouth. Bersalis, breathes life into a party!
Ingredients: water, barley malt and wheat malt, hops, spices and yeast.
Alc. % 9.5%
Colour: golden yellow.
Aroma: Bersalis possesses a refreshing aroma of citrus fruit and malt.
Oude Geuze:
A traditional Old Geuze with a fruity aroma and hoppy notes! The "Oude Geuze Oud Beersel" is a miracle of nature. Old Geuze is the result of blending Lambic beers of different ages. One year old Lambic still possesses good fermentation powers. Two and three year old Lambic beers on the other hand possess a more robust flavour. This is where the brewer's skills come in to the equation as it will be up to him to select and blend specific casks of Lambic based on his personal taste.
The blending of the Oud Beersel Lambic creates a refreshing beer with a good head on it, brewed according to the rules of the trade. The "Oude Geuze Oud Beersel" distinguishes itself thanks to its typical fruity and hoppy notes and is well-loved by many a beer aficionado.
Ingredients: water, wheat, barley malt and hops.
Alc. % 6%
Colour: golden yellow.
Aroma: A hoppy aroma with a typical smell of wild yeast.
Taste: The flavour of the "Oude Geuze van Oud Beersel" is known to combine a pleasant bitterness with a slightly sour though gentle character. The first swig refreshes the tongue and leads the way to the marvellous world of spontaneous fermentation and its complex subtleties
Oude Kriek:
A traditional cherry beer ("kriek") with an overwhelming taste of fresh cherry! The "Oude Kriek Oud Beersel" is a beer brewed in accordance with traditional methods, made from real cherries and Oud Beersel Lambic matured in oak casks. Once the cherries have been added to the beer, they are slowly absorbed by the Lambic, giving the latter its distinctive fruity notes and red colour.
"Oude Kriek Oud Beersel" is unique of its kind, as it contains 400 grams of cherries per litre of beer. The "Oude Kriek Oud Beersel" is not sweetened and does not contain flavouring agents or preservatives. This ensures that justice is done to this centuries-old product.
Ingredients: water, barley malt, wheat, 400 gr cherries/litre and hops.
Alc. % 6.5%
Colour: ruby red
Aroma: A surprising aroma of cherries and almonds.
Taste: "Oude Kriek Oud Beersel" possesses the pleasant sourness of champagne. The real cherries leave an overwhelming fruitiness and the hint of almonds from the pips makes the experience complete. The spontaneous fermentation merges the taste of the cherries with the Lambic beer to create a pleasant drinking experience.

Sample recipe: Pork tenderloin with asparagus and Sabayon sauce made with Oude Geuze (Oud Beersel)

Ingredients (serves 4)
• a bundle of asparagus (500 gr)
• 1 bottle of Oud Beersel Oude Geuze
• 2 pork tenderloins (800 gr)
• some sprigs of rosemary
• 4 eggs
• pepper and salt
• nutmeg
• pork stock
• butter
Preparation
• Clean the asparagus and peel, if necessary, with a peeler. Steam (or boil) the asparagus till they are 'al dente'. Put them aside and keep them warm.
• Make some small cuts in the pork tenderloin and put a bit of rosemary in each cut. Season with salt and pepper.
• Fry the pork tenderloin quickly on all sides on a high heat. Transfer the meat to an oven dish and leave to cook in an oven at 180°C. The pork tenderloin should be slightly pink inside.
• On a low heat, beat the four egg yolks together with 4 egg cups of Oud Beersel Oude Geuze. Season with salt and pepper and add a generous quantity of freshly-grated nutmeg.
• Remove the pork from the oven, drain the fat from the dish and pour in the remaining Oude Geuze. Add some stock. Reduce till the required thickness and add some knobs of butter to finish off the sauce ("monter au beurre").
Presentation
• Cut the pork tenderloin at an angle into slices just over 0.5 cm (1/4") thick. Put them on a warm plate. Make sure they're slightly off-centre. Pour over some of the sauce.
• Add some asparagus to the plate and pour some of the Sabayon sauce on top of those.
• Serve with potato croquettes or Pommes Duchesse.
